Almost all caviar sold today is farmed, about 1.6 to 2.5 kg of CO₂e per 30 g tin. Wild sturgeon are among the most threatened animals on Earth.

The IUCN lists all 26 sturgeon species as threatened with extinction (2022 assessment).

Trade controls

Every sturgeon species has been listed on CITES Appendix II since 1998, so legal caviar carries trade permits.
